if you don't grow anything else in your garden - you must have a herb patch! easy to grow in a limited space (use old pots/troughs/barrels), & so wonderful to pick fresh when cooking.  i always keep a wine glass or cup of freshly picked herbs in my kitchen - the vibrant green is stunning & the aroma is gorgeous! why not pick a bunch of fresh herbs for your own kitchen for 'flowers for friday'?

one thing that is loving all of the rain at the moment is the garden!  i have an abundance of rocket & basil that i wanted to do something with before the bugs attack so i whipped up this gorgeous pesto - normally parmesan cheese & pine nuts are used but i had neither so i got creative & used lemon & almonds instead. divine! best of all you don't even need to be able to cook to make it!

nest's rocket, basil, almond & lemon pesto
big bunch fresh rocket
big bunch fresh basil
cup of slightly toasted almonds
rind & juice of one lemon
1 1/2 cloves of crushed garlic
salt & pepper
olive oil

dry roast the almonds. in a food processor i whizzed the almonds first to get the right crush.  set aside, then whizz the rocket, basil, lemon rind & juice, garlic, salt & pepper.  add almonds to mix then drizzle in the olive oil until you have the right consistency.  seal in a sterilized jar.

i always keep old mustard & jam jars for making things like this.  wrap around some gorgeous ribbon & label your jar & you have a perfect gift for someone!
